My husband and I will be in France for our 45th wedding anniversary and would like to see some Christmas markets. We would love to hear your favorites & suggestions to get the most out of the markets.

Strasbourg and Colmar and the surrounding villages, of course! I haven't done Paris at Xmas, but reports here indicate the Paris markets aren't noteworthy.

Just keep in mind, if there's a COVID surge the markets may close or be partially shut down. So have alternate plans ready.
I was in Alsace briefly for the markets of Colmar and Strasbourg, loved them. From Colmar you can visit the Alsace villages too. Google Noel en Alsace. You may need a car for the villages, but since the area attracts a lot of tourists, there may be frequent buses. The markets in Strasbourg were open at least until 9 pm. In Colmar they closed around 7 pm.
Consider spending a night or two in Stuttgart (direct trains take under 1.5 hours) and go to nearby Esslingen for the medieval market, lots of fun and magical after dark - no electricity, only lanterns and candlelight.
Agree with Pat & Chani. Enjoyed both Strasbourg & Colmar in November 2021 after Thanksgiving.
