We've booked a few days in Paris just following Christmas. We love Cassoulet and were looking for recommendations for a restaurant that's a) delicious and b) likely to be open! Any suggestions? Thank you so much!

I recommend Benoit in the 4th for cassoulet.

My favorite cassoulet is served at La Brasserie de l'isle Saint-Louis. They are very reasonably piced and serve great beer also. The restaurant is closed on Wednesday.
