It may be confusing but hotels are measured by the French government up to 5-stars. Restaurants are measured by the Michelin guidebooks up to 3-stars. These starred restaurants are very high quality and can cost up to hundreds of dollars or euros per person though they often offer a smaller, lower cost, weekday lunch menu. If you are looking for a gastronomic restaurant, you'll find these on the Michelin website.
The Michelin company also has recommended restaurants, also good quality, lower price without stars. There are maps on the website so you can see how close the restaurants are to the Metz and Strasbourg train stations.
There are several other sites that rate restaurants, but I usually look at Michelin for a starting point when I want a more refined meal and then do a general search of reviews on line.
Given your other threads, perhaps you meant hotels?
In which case I highly recommend the Hotel Tandem in Strasbourg, opposite the train station and a quick tram ride away to the city center (it is very walkable, too).
High-end hotels are thin on the ground in Metz. Many years ago, I stayed at the Mercure Grand Hotel, it was good but I cannot say how it held up, and it is not particularly close to the station (but Metz is not a big city).
