I am flying into Barcelona in two weeks and heading up to Collioure, France. In the past, it seems like there have been significantly more train availability. For whatever reason, this time trains seem to be rather sporadic when using the SNCF app. I prefer to buy tickets in advance, but now wondering if I will be forced to buy tickets at the Barcelona-Sants station. I would be curious to hear thoughts on this, or if there are strikes or other issues impacting train travel in this route.

As of now, no SNCF strike has been announced, and there are no rumors of an imminent strike. In any case, if your train is cancelled, you will be refunded.. There are 2 or 3 SNCF trains per day with a connection in Perpignan.
The Spanish company Renfe also offers trains to Perpignan. If you take one of those, you will need to buy a separate SNCF ticket for the Perpignan–Collioure leg.

I don't know your exact date but the Trainline site shows trains almost hourly on, for example, Sept. 20 and 21. Most have a change in Portbou. Most are operated by Renfe so perhaps that is why they don't show up on the SNCF app? When I looked quickly, it seemed that the few that do show on SNCF connect cost much, much more than most on Trainline. I'm guessing that SCNF only shows the high speed international trains but there are more frequent and much cheaper regional trains. The Renfe app didn't accept Collioure as a destination when I tried it. As not infrequently the case with Renfe trains, the Trainline app seems easier especially when a change is required.
