Does anyone know a good baking class either in the French Riviera area or Provence? Would love to learn to make some pastries or baked goods.

Rosa Jackson's school, les petits farcis, has specialty classes in macarons and choux pastry. It is in Nice, near the Cours Saleya market. I believe they also do one dessert in the normal market tour/cooking lunch class.

Yep - Rosa Jackson for the win! Our family did her "Cours Saleya Market Tour Cooking Class and Lunch" last month and it was a highlight of our trip. Rosa is knowledgeable, fun, and personable. Just a great experience. She offers macaron and choux classes also.
