Baguette baking class recommendation in Paris

I highly recommend Cook'n With Class. I took both a wine & cheese class and a Market class there in September 2011. They offer a baguette class that I'm planning to take on my next trip... Chef Alex Dreyer was great!

La Cuisine - have taken several classes there and really like the set-up - classes taught in English, excellent instructors, reasonable cost (compared to other Paris classes!) for many classes, etc. They have MANY offerings to choose from. They're located near the Hotel deVille, along the riverfront.
