I'm having trouble finding train tickets for Paris-Giverny & back on Ascension day, May 26th and really that whole weekend after. I've checked SNCF & thetrainline - are the trains really sold out? Is there another site I can check?
Alas, there is engineering work between 26-29 May inclusive. Trains do not run farther than Mantes-La-Jolie, which is why they appear as "sold out" when you try to book for Vernon. All info is here, French only:

Therefore, I suggest you use a bus tour to visit Giverny! No idea which one, though.

Adding on here, it's our first trip to France. If i read your comment right - the trains TO Giverny from Paris are not available further than Mantes-La-Jolie but not from Mantes-La-Jolie right? trying to book our way TO paris on the 26th, wanted to check before we made a mistake!
Not sure I understand your question, sorry.
There are no trains on those dates between Mantes-La-Jolie and Val-de-Reuil, just south of Rouen, both ways. Vernon-Giverny station is on that stretch, so it will not be served. Replacement buses are mentioned but I would not rely on those.
Also, the official note does not say at what time the closure begins on the 26th, so you might still be able to find a morning train.
