There are two river cruises that I know of Bateaux Mouches and Vedettes de Paris. I've done both as regular cruises and also their special cruise and see no real difference between except for where you get on the boat. I did do a Vedettes cruise one year on July 14th and bought tickets for a cruise at around the time of the fireworks and it was lovely. If you want a fun champagne drinking experience while on one of the cruises, I highly recommend O'Chateau's champagne cruise which is a collaboration with Vedettes. It's pricy (69€) compared to Vedettes 20€ aperitif cruise but the 3 glasses of champagne were delicious and worlds better than what was served for the aperitif cruise. In case you can't tell, I love a 1-hour Seine river cruise.
You can also bring your own bottle of champagne; most wine stores ahve cold bottles ready to go. We like Vedettes Pont Neuf, but there is also a line that launches just upriver from Pont d'Alma on the right bank and another that launches at the base of the Eiffel tower. Do whatever is convenient.
You will be living the dream. No breeze. Not too cold. On deck, clear night. Maybe the moon.
