Has anyone any experience with the Maison Fleuret wine and gastronomy tour near the Notre Dame?
Or any wine / food tour that was amazing? Or any place for pate, cheese and wine near the Marais?

No idea about the tour. But it is traditional for Paris cafes to offer planches i.e. cheese/charcuterie boards and many have extensive wine lists. Nothing more traditionally French than to meet friends at your favorite cafe for a cheese/meat board and wine for 'apero' in the early evening. We have developed our favorites but we have never had a terrible planche.
For a cheese tasting (not tour). we thought this one was pretty good.
