We are hoping to ride bikes one day from Eguisheim to Colmar and back.

Google “Alsace Routes des vins bike” We saw a lot of cyclists in the area. Beautiful countryside and villages.

I'd just ask where you rent the bike. It's a short enough ride that you may like a scenic route instead of a straight line.

This is similar to but with some differences to the road route. One place the cycle route notably avoids is Kayserberg. I would detour to include it.
