I am looking for recommendations for a decent hotel in AIX en Provence or the surrounding area for three nights in May for a couple.

We stayed at Hotel Cardinal. Loved it. An older hotel, reasonable prices, also featured in the 2024 RS Provence book. Our room was huge (by EU standards). It was a very convenient location for exploring Aix.

On our trip to Aix in May 2025 we stayed at the Hôtel Roi René, a few blocks south of the Cours Mirabeau and close to the train station. It has a wonderful pool and there are rooms with terrace balconies overlooking the pool deck, so it was a relaxing way to spend a few hours in the afternoons after our sightseeing. It's quite convenient but not inexpensive.
