You don't book. You follow the signs to the official taxi queue (ignoring anyone who offers you a taxi even in the taxi line except the dispatcher at the head of the line who will direct you to a cab) the fixed fare to the city is 56 for a hotel on the right bank and 65 to a hotel on the left bank. No tip required. It is prudent to write your address down clearly and make sure the meter is not running but the fixed fare is posted.
there are cities where reserving ahead is the right idea -- we did this in St. Petersburg for example, but Paris is not one of those. The official taxi line is the way to go.
To return you book a ride two days ahead on the English speaking G7 taxi phone line or book on line.

To expand on what janettravels44 posted, it's also a good idea to have the fixed rate plainly printed on a 3 x 5 card or paper as well as the hotel address.

I understand taxis work well - but for another option, I used Easy Go Shuttle which was a private transfer from the airport to my hotel. At the time, it was only about $20 more than the taxi and I felt it was worth the cost to ease my mind as a solo traveler, first time to Paris.
how is paying an extra 20 for an option that is notorious for not showing up easing you mind. The taxi line is always there and will never fail to show and claim they were there and you were not and take your money.
Taxis Parisiens are very well known, and regulated by the Préfecture de Police. Only official taxis have access to HOV lanes on A1 into Paris and to bus lanes when in the city. I have never heard of Easy Go Shuttle, but my experience with shuttles in general, at least between CDG/ORY and Paris, is that they are not particularly reliable. Difficult to understand why anyone would pay more than necessary, but it is a choice.
We contacted our hotel beforehand and used the black car company they recommended, it was really handy to have the guy standing right outside baggage claim next to his idling car take us directly to our hotel.
Used a regular taxi on the way back to CDG.

How did that work? Was the car idling inside the terminal right outside baggage claim.
Well that guy "right outside with his idling car" was probably parked illegally so I would not assume everyone will get that service. They are supposed to be parked some ways away

Taxis in Paris are legally obligated to take credit cards. Sometimes a driver may say that the machine is "broken." In the rare event that I do not have cash with me I usually ask at the airport if they take credit cards to be sure that I am not getting into a car with a "broken" machine.
All I can tell you is the guy's car was sitting right outside only steps away from the baggage claim, perhaps that is changed in the recent past.
And yes, I've had a couple of experiences with Paris taxis where the machine was either " broken " or the guy just wanted cash instead. The other thing is sometimes the machine wouldn't accept one of our credit cards but would accept another, so go figure
