Air France is showing fares from San Francisco to Paris round trip between early September and late February for under $600 for the basic and under $700 for the standard ticket. I think that it's the same on Delta.
They offer free changes and a voucher good for a year if you cancel a flight scheduled before Dec 31st.
I took the bait and booked a late Fall flight with fingers crossed that France is open and that I can go.
And if it doesn't work out, I've got that "money" banked with AF for next year.
(And having a possible trip is worth way more than any tiny interest that this money would earn if I left it in my bank...)

Just got a round trip ticket for 685$ to see significant other during the week of Thanksgiving. Hoping it goes through.

It's so hard to know right, I agree. Lock in a great fare with the flexibility to move it to next year. But here's hoping!
