We arrive in the afternoon at Montparnasse train station on a Monday, from Bordeaux, and want to go to Holiday Inn Express hotel at CDG. Do we need to pre-order a taxi, or are there taxi ranks at the station as there are at the airport?

Yes, there is a taxi rank in Montparnasse Station. Just follow the signs. However, I don't know if the fixed rate to the airport would applly when going an airport hotel rather than the airport itself. The difference in price could be negligible or less. Taxifare finder shows 50-53 euros.

The taxi fare from Montparnasse to CDG is fixed at 62€. There is no need to pre-order a taxi, there is a taxi station at Montparnasse.
The Holiday Inn Express at CDG is within the airport boundaries. If there is any question about the drop-off point, go to terminal 1, then take the CDGVAL (free train shuttle), one stop to Parking PR which is where the Holiday Inn is.
