My wife and I are taking the train from Paris to Strasbourg in early September. Spend a couple nights, then pickup a car and head south. We prefer B&B's, Chambres d'Hotes, or smaller 2 star hotels (simple/clean). Any recommendations in Strasbourg? Thanks!
We once stayed in the Hotel Cathedral with a window that opened out onto the facade of the wonderful Cathedral. The square can be a bit noisy in early evening, but we really liked it. They also have a parking lot -- very tight and difficult in a dark cellar which at that time had no light. It was several blocks from the hotel. Since we were driving from Amsterdam to Paris via Provence, it was still handy. It is better to pick up the car on the way out of town as you apparently plan doing.
The Petite France area of Strasbourg is very nice and several of the hotels and restaurants are on the canals.
Lovely to walk around and easy to walk to the Cathedral area. We stayed at the Hotel Regent but it is a 3-4 star hotel.
This is not recent, but we enjoyed our stay at Hotel du Dragon, which was a solid 3-4 star, good walking location. We rented the car upon departure, as you are doing. We got a unique under-the-rafters but huge room, requiring a spiral staircase to enter, I think. So long ago we used the room phone to confirm our reservation at Restaurant L'Auberge de L'ill (3*). Exceptional, private, outdoor aperitifs at the riverside, followed by expensive but worth-it meal. Not like urban 3-stars.

Not fancy, but clean. Room not large, but adequate, with a great view overlooking the street and canal (river).
Quite close to the train station also ... an easy walk.
Boulangerie-patisserie right across the street. What more could you want?
