My husband and I are traveling to Europe in September, going to Amsterdam, Paris, and ending our trip with a week in Provence and finally a few days in Nice, from where we will fly back to the U.S. We would like to stay in a quieter part of Nice, but one that is also close to attractions, restaurants and shops, preferably walkable. We are considering the Hotel Petit Palais and are wondering what others who have stayed there think or if there are other hotels members can recommend that would also be quiet and convenient. We will have a car that needs to be returned to the airport and are also considering staying the last night in the airport Sheraton, as our flight out is very early in the morning. Thoughts?
The Petit Palais is up in Cimiez and in a quiet area. You can't tell from the maps, but it is up a hill. There are very few walkable services around in a heavily residential area. If you a more walkable area but one not in the thick of it, you might try the Villa Victoria on Blvd Victor Hugo or some nearby hotels like the Windsor. This area is only a few flat blocks away from the main streets and gets less tourist traffic, except for those passing through on the walk up to the train station. If you want to be near the sea and old town, La Perouse sits a bit elevated at the end of the Promenade. There is some foot traffic here, however. You could consider returning your car early to the airport and taking the tram into the city for your last two nights.
The Sheraton is indeed walkable to the terminal. There is really nothing around it, just transport. The new area around the mutli-model airport/bus/train station area hasn't really been built out yet with supporting businesses. But depending on your flight time, a taxi or Uber to the airport can get you there in 20 minutes in the morning, maximizing your time back in the city if you stay there.

It is on the expensive side as Rick points out the west coast end hotel is really great. Right on the Mediterranean and wonderful staff.
