1) is this still a good reliable company to use in the Loire Valley? He has been in RS guidebooks.
2) He is asking me to email credit card info to reserve. How comfortable should I be with this arrangement? What would you do?
3) Are there other companies you've used locally in the Loire?
4) Any recommendations for lunch / wine tasting near Villandry?

This company has been around for years.. you can put aside that sort of worry. The reviews are good.
What exactly is your worry .
You can simply google "reviews of Acco Dispo " you know.. and read many reviews on other sites.
Also. I have emailed my credit card infor to Europe quite a few times over the years.. ( hotels etc) the best way to do it is to email HALF the numbers first.. then the last half of numbers .. that way no one email contains them all. I have never had a problem with it at all.
Frankly may I suggest you also go on the tripadvisor.com Paris forums or Loire Valley Forums and ask .. since there are thousands more posters there you may get more responses..
