Of course you have Narbonne and its market and roman ruins. It has a weirdly famous attraction--- les Grandes Buffets -- the fanciest buffet ever found (including 30 cooked to order dishes, 100+ cheeses, and a lobster tower). .
I'm certain you are heading to Carcasonne and Collioure. But there are some gems in the countryside, including like Pezenas, Minerve, and other villages.
You can head to Villefranche-de-Conflent. There is the train jaune (yellow train) that starts from there and stops at villages/hiking points and goes all the way to the way to the Spanish border (in the Pyrenees).

In addition to the places already mentioned you have Perpignan to the south and Sete and Montpellier to the north.
I really, really liked Toulouse, which is on the way to Albi, but I think those two are very far away for a day trip when you're staying in Armissan. That area could use at least two solid days (3 nights), I think.
