I’m looking for a hotel recommendation in Toulouse that’s central to seeing the sights of the city. I have not been there before, but I am interested in walkable tours of local markets.

I really liked Hotel Albert 1er, a comfortable, air conditioned hotel very close to the main square and within walking distance to the interesting sites and restaurants. It had a nice breakfast in a lovely dining room.
I stayed at the Hotel Mercure Toulouse Centre Wilson Capitole.
Nice hotel. Great location.
I liked Toulouse because it wasn't overrun with tourists.
We liked the Ibis Place du Capitol. Great location, good facilities. Lots to see and do in Toulouse.
You don't need a tour of Toulouse's local markets. You put on your shoes, leave your hotel room and go to the Victor Hugo market. One of the most famous in France.

There are also typical restaurants on the floor above the market.
When you visit the market, go up there around 11:00 a.m., 11:30 a.m. to reserve a table.

It is a “budget” hotel 85E bkfst 8.5E in a good location, clean, very comfortable bed, English speaking staff that were kind and helpful. Air conditioning.
The website “Join Us in France” has a variety of podcast on the city and area. We took a private walking tour Elyse ToulouseGuidedWalks.com that was excellent.
