Two of my good friends and I are going to be coming from Barcelona into Marseille and have allotted five days in middle of June to the South of France. We will have a car and are looking at ending in Nice before we train to Florence. Really trying to get a feeling for the South of France and how to budget time. Would like to do something like cliff diving in Cassis, but would would like to know where else is a must for three males in their early 20's. Thanks!

You might not want to go to a bullfight, but there are many small villages in the South of France that have "bull games" and variations on the running of the bulls, famous in Pamplona.
This page Union des clubs taurins (sorry it is only in French) has a pretty good list of the different fiestas in the South of France. Here they give a good explanation of the different bull events and the situation in the South of France.
You could only do half of Rick's suggested Provence/Riviera itinerary, and backward, but it gives you an indication of timing.
Since you have a car and sound sturdy and active, consider the La Fontasse youth hostel on a wild hillside in the national park above the Calenques, no showers, bring food to cook.
Driving around the gordes of Verdon is beautiful... there were lots of kayaks there... I am sure you could rent.
Horseback riding in the Carmague? Beautiful beach town there with possible night life.
