3-week home base in France

My wife and I have been to France 10 times in the last 18 years. Each time we select a different region to investigate and fly back from Paris.

Can anyone suggest an area where we could stay for about 3 weeks. From there we could take day trips by car or train travel.
We have been to Brittany, the Loire Valley, Dordogne, Provence, Burgundy, south east France, Alsace, French Riviera.

We are looking for a quaint or medieval or small town taking in the local flavor. I know this is a general request, but perhaps someone out there has had a marvelous experience they can share.

We spent time in the Aveyron, basing in Villefranche de Rouergue. From there we traveled in every direction to visit sites: Conques, Rocamadour, etc.

Both of the above-mentioned areas are worth spending time in. In the last few years we've made several visits to the Savoie/Jura/Isere/Doubs region. All are recommended. You can check out the specific places in my blog: http://mainelywinenews.blogspot.com/
