15 days in South of France and Paris

Hello! First of all thank you in Advance. This is my continuation on upcoming trip this September to October. I posted already my 2 weeks trip to Rome and Tuscany. The main points is I'm going to arrive in Nice and I'm going to depart in Paris. I'm going to rent a car in South of France. I really like Nature and old towns. If you have any suggestions, please feel free to leave a comment. Here's my itinerary:

Day 1 : Nice

Explore Nice Walking tour.

Day 2: Nice

Explore Villefranche Sur Mer

Day 3: Nice

Rent a car and explore Eze and St Paul de Vence

Day 4 : Moustiers Saint Marie

Explore Moustiers Saint Marie*

Day 5: Arles
Explore Arles then go to Les Baux in the afternoon

Day 6: Arles

Explore Gordes

Day 7: Arles

Explore Uzès

Day 8: Cassis

Boat ride tour Calanques National Park

Day 9: Cassis

Hike and go to the beach in Calanques National Park

Day: 10 Paris

Go back to Nice and then fly to Paris. Explore Paris

Day 11: Paris

Walking tour in Paris, Place de la Concordem and Luxermbourg garden

Day 12: Paris

Explore Eiffel Tower, Arc de Triomphe, Champ- Elysees and Tulleries Garden.

Day 13: Paris
Explore and hike Fontainebleau. Trocadero at Night.

Day 14: Paris

Explore Latin quarter, Ile de la Cité, Coulée Verte René-Dumont and Vincennes Woods.

Day 15: Paris

Explore Palais Garnier and Montmarte.

Depart the next day.

I would change your order to this:

Nice> MSM>Cassis> Arles>drop your car in Avignon>TGV to Paris

This should be a more efficient route and you won't have to deal with an airport mid trip.

Or, if you really prefer flying over a train, Marseille is a closer option.

No problem! Careful of the lower route to Port Pin from Cassis. The rocks are polished smooth from foot traffic and very slick. Sounds like a great trip.

I 100% agree with the suggested change of order.
Otherwise, it looks like a good trip!
On the way from Nice to Moustiers, do not forget to explore the Verdon Gorge. If you do not mind a slightly narrow road, I suggest you drive along the southern rim, Corniche Sublime. My suggested Nice-Moustiers route would go:
Nice - A8 Junction 42 - Grasse - quick stop in Bargême if time allows (takes 45 min) - Comps-sur-Artuby - Aiguines - Moustiers

I would note that if you are are heading from Moustiers Ste Marie and the Gorge du Verdon, you may want to stay in St. Remy (or the west end of the Luberon instead). You could then drive through the Luberon and stop in Gordes and Rousillon. Then you can day trip to Arles, do nearby les Baux and Glanum, and stop at the Pont du Gard on the way to Uzes. It's a little more central to all these places on your list. Then head to Cassis and return via Marseilles.
