I am in the process of booking a apartment in Paris and have been asked to give the apartment owner/manager a copy of my plane/train ticket instead of a deposit. Is this common practice? It seems a bit odd to me. Has anyone had this experience before?

It does seem a bit odd but what can be the harm? Maybe the owner has been stung by people who book the apartment before booking their travel arrangements, and then have to cancel when there is a conflict. Why don't you just ask the reason?
I also see no harm. This gives them more proof that you plan to show up, and the ability to check whether your flight is late. They may be coming across town to meet you and want any info that can help them work around flight delays.
