Two part question.
Is there a need to make reservations for the towns we visit during the Loire tour?
Any recommendations for a restaurant in the Paris 7th or near by?

We did the Loire tour in 2019. The only reservation I remember making was in Sarlat, at La Cour des Poetes, which turned out to be one of our favorite restaurants that tour.
Our favorite restaurant in Paris in the 7th is Café Roussillon, at the intersection of Grenelle and Rue Cler. We make it a point to eat there at least once every time we're in Paris, and we've never been disappointed. Good food, great staff, good location.
