We had the same problem so we took a food/wine tour. We used https://parisbymouth.com but I'm sure there are other comparable tours.

If you're looking for more curated lists of Paris restaurants with good wine lists, read around in wine related media.
For instance search Google for "wine spectator Paris restaurants"
Or try "Jancis Robinson Paris Restaurants"

The reason I say to use wine media to find food and wine restaurants in Paris is that if a restaurant has good wines, it's almost 100% guaranteed to have good food. But not necessarily the other way around. Plus you will get much more tightly curated lists that will fit the restaurant types that you are looking for. Likewise, all fine wine aficionados are also foodies, but not the other way around.
