My family and I are visiting Paris in February. I'm looking at the Signature in St. Germaine, Novotel Les Halles and the
Hotel de la Bretonnerie.
I am wary about all three for a variety of reasons:
1. Signature (location is maybe a bit too far out of the way?? or am I being bananas??)
2. Novotel (location is perhaps quite busy and loud??)
3. Hotel de la Bretonnerie (unnervingly less expensive and some of the rooms for families look like they have super odd configurations)
Should I keep looking altogether?? Are all of these totally fine?? If so, is one better than the other??

We just got back from Paris, 6th trip, and stayed in the Hotel Relais de Halles……brand new area for us and neighborhood. We enjoyed being so close to so much going on….and our 5th floor room window opened up on the street but our sound machines at night kept the noise out. It was a wonderful new location and I would recommend that area again…….so many good stores in the Westfield Forum that you can frequent if you need anything.

The Bretonnerie is indeed smack dab in the middle of a very busy (and therefore presumably noisy) area in the Marais. I would be wary, although I have never stayed there and don't know for sure.i would look at reviews on booking.com to see if the noise comes up as a pattern in the reviews or if it is non-existent.

Of the 3, I prefer the location of the Signature Saint Germain. But, without more information, it's hard to make a recommendation.
What are you looking for in a hotel? How many rooms and what are the ages of your kids? What is your nightly budget per room in Euros? Will you be mostly walking or the metro/buses. Or do you prefer Uber/taxis to get around?
Maybe there are other options for your family.

Last September we quite enjoyed Hotel des Grandes Ecoles. Lovely, quiet garden courtyard. When you’re at the hotel, you feel like you’re in the French countryside rather than so near the beating heart of Paris.
Near the geographic center of the 5th Arr. across the street and two or three doors away from where Hemingway lived in Paris with his first wife, Hadley, and their baby.
Steps from the top of Rue Mouffetard, very near the Sorbonne, St Etienne Du Mont and the Pantheon, just a 10 minute walk to the Cluny and a 12 to 15 minute walk to the portion of the 5th Arr along the Seine near Ile de la Cite and Notre Dame. Luxembourg Gardens and Jardin des a Plantes are also walking distance - 10 - 12 minutes in different directions.

The two top issues. Finding a room that works for your family. Finding that room in a location near a metro station. Solve those two and the rest will fall in place.

We read many positive reviews on this forum.
When I'm traveling solo I stay in their sister property. maisonchomel.com
Both have a/c, beautiful decor and exceptional customer service.
Just avoid the first floor of the Signature since you might experience some noise from the metro.
