Most will be booked by now, so your best bet is to go through the Michelin, find the level of restaurant that fits you from bib gourmand to three-stars, and start contacting them. we loved Petrelle last year -- it was one of our best meals of the trip. https://www.petrelle.fr/. lovely ambiance and great service. they offer a reasonable tasting menu and we opted for the wine pairings as well. highly recommend!
