Interesting activities and places to eat in Toulouse

We will be traveling to Toulouse in early May as part of a tour group. We’ll be staying near Place du Capitole if that is any help

We have about a day and a half of free time. We’re looking for fun things to do on our own. Museums are probably not the objective. Markets, food tours, private tours or other local flavor would be great.

We arrive on a Monday which is a tough day to find a lot of restaurants open. We were hoping of a true French meal in a cozy atmosphere.

Any advice would be appreciated,

You must try the cassoulet at Le Colombier. Many regional French dishes have a basic recipe that was agreed on by a number of restaurants. This is called a charte. Le Colombier was one of the original group that specified the ingredients in Le charte for cassoulet. I’ve sent you a private message that details my visit to the restaurant.
