Here are recommendations and a warning about hotels in southern France after a visit in September, 2014.
BEAUNE: Hotel de la Cloche - highly recommended - easy walk from train station, easy walk into the lovely community of Beaune.
CARCASSONNE - Best Western Le Donjon - highly recommended - shuttle from outer gates, great reception, overnight stay gives you freedom to explore at night, they offer several locations within the walls and all are great.
NIMES - Hotel Cesar - avoid as it maybe near the station but is sadly showing its age.
NIMES - Imperator - classic full service hotel in great location and at good price but watch out for the expensive breakfast.
VITROLLES - MARSEILLE AIRPORT MRS - Best Western Marseille Airport - good reliable location with free airport shuttle, pool and quality rooms; dining room has limited offerings but they are fine for a short stay.
