Baltics - 8 Nights

We have 8 nights in late August for Baltics from NYC and need suggested itineraries. We are generally fast-paced, seasoned travelers that like culture, history, scenery and food. We are thinking Vilnius to Riga to Tallinn to Helsinki or potentially doing either/or between Vilnius or Helsinki. Helsinki has some direct flight options which makes it slightly more attractive.

Suggestions?

For what it's worth, we are comparing this to a Poland trip (some combination of Krakow, Wroclaw, Gdansk and Warsaw) in the same timeframe and are going back and forth.

It is ~4-5 hours between each of those Baltic cities, and ~2-3 hours on the ferry boat
between Tallinn and Helsinki. Buses are probably the best way to travel if you're
not renting a car.

If your goal is only to visit the 3 major cities, you have, on average, 2 days in each one,
considering a half day of travel between each and then going to or from Helsinki. If you
depart from Helsinki you probably want to be there the night before your flight, and it's
not clear if that counts in your 8 nights.

You probably don't have time to do anything in Helsinki other than an overnight. If you
want to venture away from the cities (very worthwhile in my opinion), then you may want to
limit it to just 2 countries. In fact, I would say that flying into/departing from Helsinki
will cost you more time than a connecting flight into one of the Baltic cities.

Last year we did a road trip Vilnius to Tallinn in August, with a rental (no drop off fee, which is very convenient).
We did Vilnius-Kaunas-Klaipeda-Liepaja-Riga-Pärnu-Tallinn, with two nights in Riga and Tallinn, and one in the others.
You could do the same, but it is probably a bit to much, in particular considering jet lag.
If Helsinki is convenient, start there, take the ferry to Tallinn the next day and get a rental.
You can probably do a road trip that just goes until Riga and then back - one leg at the shore, one in the hinterland. Maybe a bit less stressful:
Helsinki-Tallinn-Pärnu-Riga-Riga-Tartu-Tallinn-Helsinki. Both Tallinn and Riga certainly benefit from two nights each.
If you do Vilnius, it is probably the one that can work best with just one night, as it is the smallest. We found the Kuroniuan split a bit disappointing.
Native cuisine was most interesting in Lithuania, Riga had some very interesting spots with different Soviet-based cuisines: Georgian, Ukrainian, Armenian, Usbeki. Tallinn was more Scandinavian, food wise.
The beach at Liepaja had the softest white sand I have ever seen.

We decided against this trip at this time. We are going to visit Poland in this window and we'll try this trip another time.
