West End Theater-When do the "stars" take a break?

Hi Everyone-
We've just decided to make a quick trip to London in a few months, and I immediately started looking into theater tickets. We'll be free on Sunday, Monday, and Tuesday night, which limits availability somewhat. My question is: for the West End productions that have major star talent, are the household names generally scheduled to perform every night? I know, of course, that everyone gets sick once in a while and that there are no guarantees, but are there rules of thumb? For example, there are seats available for most nights for Ian McKellen and Patrick Stewart in No Man's Land...is it safe to assume that both actors are at least planning on performing all shows, or is it an unwritten rule that understudies almost always fill in on matinees and, say, Tuesday nights? We would just like to give ourselves the best chance to see the living legends if that's the direction we decide to go.
Thanks all in advance!
Peggy

These two men are actors by trade and passion, unless deathly ill, expect them to perform. No unwritten rules for British theatre except its most often fabulous. Over the years have throughly enjoyed watching Maggie Smith, Judy Dench, Ian Mckellan, Brenda Blethyn, Rupert Graves and Charles Dance on stage in London. Go for it.

Yes, UK theatre culture is such that "stars" will not take time off just for holidays or avoid matinees.

Please note that most London theatres including the production that you are interested in are closed on Sundays.
