I will be visiting Wells in August with 2 friends. We have a particular interest in medieval cathedrals.

The cathedral offers its own guided tours. And if you’d like to organise a private one with them to cover some more specialised interests, you can get in touch here: https://www.wellscathedral.org.uk/your-visit/group-visits
(It says group visits but there’s also an option on that page for specifying a private “special interest” tour, which sounds like what you might want.
