I am flying into Heathrow with my family (3 of us). We are staying at a hotel near Victoria station. However, I see that an Uber ride to the hotel would be cheaper than the Train and Tube and, according to Rome2rio, faster.

For the Victoria area, you can just take the tube. It will be about 45-50 minutes. See how that compares to a taxi. Although a taxi can be less stressful if flying in on an overnight flight and the taxi will find your hotel for you.
Even been in London traffic?
The Heathrow express is the most expensive option if you wait till the day of arrival. Offers for less expensive tickets can be found in advance on line. The ride into London's Paddington Station is 15 minutes. The Heathrow Connect takes a bit longer, 20-25 minutes and a bit cheaper. As both trains arrive at Paddington Station you'd then need to take either the Underground or taxi to your hotel.
The London Underground takes about an hour and remains the cheapest option. Take the Piccadilly line to Hammersmith, exit, then hop on a District line train to Victoria station. Piccadilly and District lines share the same platform and Hammersmith. Very easy option.
Is it money or time you are trying to save?
According to tfl.gov.uk, it takes 45 minutes to get from Heathrow to Victoria station by tube (Piccadilly and District lines), and it costs GBP 5.10 per person at peak times (Monday to Friday, 6:30-9:30) and GBP 3.10 per person at all other times. An Uber ride would be less than GBP 15.30? Or are you comparing it to the Heathrow Express price?
How far from Victoria is your hotel? Can you share?
Most important = = when is your flight due to arrive? And what day of the week.
Remember that the ripoff Uber charges surge pricing. The Underground does not vary in price and is pretty reliable.
So your answers will allow us to give you a personalised answer instead of a cookie cutter one.
My bet is that the tube and a short walk will do the best job, and quickest and cheapest.
If you take the tube, I suggest changing at Baron's Court. As with Hammersmith, you also walk just to the other side of the platform, but it is less crowded than Hammersmith.
that is reasonably rare. In fact I have never had that happen to me. If somebody jumps in front of a train or a train has a severe breakdown, trains can and are delayed.
I've never been in a situation where I have had a bus play leapfrog over a problem. I can imagine a bus taking me to an unrelated line, such as a deep tube line from a sub-surface one. Circle, District, Hammersmith and City, Metropolitan are sub-surface. All the others except Waterloo and City are deep.

I was comparing the Heathrow Express plus tube price and time to the Uber listing.
I am guessing that the Rome2rio website is giving me a car travel time faster than the Heathrow Express plus tube because it is based on ideal conditions. I am arriving at 7 am, so I am guessing I will hit a lot of car traffic.
Thus, it looks like the tube to Hyde Park and then a taxi from there to the hotel is my best option. I would not mind walking the mile to the hotel from the Hyde Park underground station, but being a little muddled from the overnight flight, having the driver find the hotel will be worth the expense.

It is really easy to change lines at Hammersmith or Barons Court. Really easy. You would then be right outside Victoria station. It is a little bit of a hump up the stairs there until the rebuilding programme is complete so I understand the South Kensington suggestion.
Keep looking both ways when you get to the kerb.
