We will be in London 11/1 to 11/6. We travel together and are seniors. Usually when we use public transportation we buy one card for both of us and load it as we use it. Would the same apply for either of the cards offered for the tube/buses?
No. Each person is required to use their own Oyster Card or travel pass, and tap in and out. (Buses are tap in only)
You can also use contactless, either a credit card or phone, and negate the need for an Oyster card.
Which card is best for 6 days?
You will want 2 Oyster cards, and since there is a daily cap, no need to do anything but fund it. I think the travel cards probably are no longer useful/cheaper because of the daily cap.

I'll add that I used my credit card instead of buying an Oyster when I was in London this past spring. I found it very easy, but I know not everybody would be comfortable having their CC handy to use for tapping in/out.

Each of you will need a card…and I’m advising each get an Oyster card.
Why?
Because which would you NOT want to lose, a credit card or an Oyster card. One a pain to replace and would cause great angst. The other not so much.
I go to London nearly every year. My Oyster card from my July trip has 7£ on it. Have had that Oyster card for 5 years.
Which card is best for 6 days?
I think just the standard Oyster card. The 7 day travel card can be a bargain, but only if you will be using the underground all 7 days and several trips a day, and your 7 days does not align with the weekly cap that an Oyster card provides.
You already would be sacrificing 1 of the 7 days, and likely will not be taking lots of trips every day.
Nov 1-6 runs from Tues to Sunday. You don't even oyster. Use contactless bank cards. Each traveller has to bring his/her own card. You can't share the card.
You will be charged the lower of journeys, daily cap or weekly cap.
If you take train, excluding Heathrow express and Gatwick express, tube, DLR or Elizabeth line from Heathrow, Gatwick, Luton or city airport, part or whole of the fare will count towards the cap.

I only use the Oyster card. Any unused amount I save for the next trip. Two persons don't use the same card.
I am in London right now. I bought a visitor oyster card at the airport when I landed. It turns out that visitor cards can't be used for an online account. The only way to check the balance or top up is to go to a kiosk at a station. Long story short, I am now using Google pay on my phone. I always have my phone in my hand anyway so it is quick and easy to tap in and out. The daily cap does apply, Ive checked. My understanding is that Apple pay will also work.
Is there any savings to getting the oyster card than rather than using your credit card to tap in/out? I'll be in London in November and trying to understand which is a better option. I don't plan on taking more than two trains per day so trying to understand which is a better option for my 8 day trip.

With that few journeys per day pay as you go seems the way, so just use contactless. An Oyster card is now £7 irretrievable cost.

This is great. I don't typically use my phone to make purchases but I can see the advantage to it. it's one thing that I always have with me at all times and it does avoid having to dig and find your purse/wallet for your credit card.

To the question of contactless (CC) or Oyster prices. I have tried to do a lot of homework on this, and came to the conclusion that they are so similar, that any savings having the Oyster card is negligible. I had never thought of the "use Oyster so as not to bring out your CC", but that is a good consideration! Phone tap with Google Pay or Apple Pay gets around that, BUT use foil on your CC and bank cards, because you might not want to tap using those! The machines will access whatever is the strongest signal.
