I’m traveling with friends from York to London on Friday May 20th. We’re staying at a hotel on Russell Street. Please recommendation which train company to take and which station we should arrive at.

LNER is the train operator. Book direct with them rather than third party sites such as Trainline. Trains from York pull into Kings Cross.
You can then take a taxi or a number 73 bus to Stephen St then walk. Use tfl.gov.uk to plan London travel routes.
For future reference, you can simply go to the nationalrail.co.uk website, enter your origin, destination, travel date and preferred time of day and receive a list of all the suitable trains. You don't need to know ahead of time what rail company travels where you want to go.
You really don't get a choice of rail companies or stations. As stated, its LNER trains into Kings Cross. Don't worry so much about the company. Just go to nationalrail.co.uk, as stated previously, choose the train you want, and it should take you to the train company that operates that train. (In truth, you can buy train tickets from any train company even if they don't operate the line but I prefer buying from the operating rail company.)
As for getting from Kings Cross to you hotel, do you mind walking a bit? Will you have a lot of luggage? It may be easier if you are not used to pubic transportation and having luggage to take a taxi.

Grand central railway also operate trains from York to London Kings Cross. The national rail site will list them as well as LNER and they are often cheaper.
