It is kind of tricky because you do not know for sure that your plane is going to arrive 7am. How would you pick the flight time departure to Bordeaux from another London area airport?

This a common thing with London area airports sort of like the service they have in the New York area for Newark airport to JFK airport for example,
I travel into London (LHR) and usually catch the national express coach to Stansted (I have family that live in the Stansted area). From Gatwick airport (South London), there is no real direct train route without transferring in central London. The National Express coach from Gatwick, I believe, stops at Heathrow or Victoria on its way to Stansted. Both the train or bus will take over 2 hours. The coach is quite comfortable but given that you will have to add an hour each side for transferring, you will be no better off than staying in the Gatwick terminal and waiting for your 6:00 pm flight. Perhaps you could buy a one day access pass to a lounge. They offer food and shower facilities. Or buy a business class ticket for the short hop across the Channel. I just think you will be better off to make the flight transfer at Gatwick. You have no way of knowing if your plane will actually arrive at 7:00 am. Better to have a nice buffer between flight connections, especially if you are using a different airline. I know it sucks to have to wait all that time - My daughter has a similar connection on her way to Edinburgh this summer (she fussed) and so we ended up paying for an upgrade on the short hop that includes lounge access.

Getting to Heathrow is easy as there is a direct National Express bus every half hour or so. It takes between one and one and a half hours depending on which terminal you arrive at Gatwick and which terminal you depart from at Heathrow. Cost about 25 GBP. The trip
Gatwick to Stansted can either be done by train and bus or train-tube-train. Cost 40-45 GBP. It will take between two and three hours depending on transport chosen.
Looking at the Bordeaux airport website and Skyscanner, Bordeaux is not served from Heathrow, so no point going there!
BA, EasyJet and Ryanair all operate this route, from various London airports. Many flights operate too early for you to make the connection, so your only earlier option is the 2pm flight from Luton with EasyJet. Gatwick to Luton is 70 miles. You could either take the train to London, cross London by tube then take another train or you could take a direct coach from Gatwick. There is a coach at 8.20, which you may or may not make, depending if your flight arrives on time and how long it takes you to get through passport control. The next bus is 2 hours later and would only give you 80 minutes at Luton airport before your flight, assuming it didn’t get delayed in any traffic en route.
I think I would look to do something at Gatwick rather than the stress of trying to make the Luton flight. You will be arriving early on a Monday morning, so there will be plenty of business passengers coming through Gatwick.
Since this is for next monday and you are considering buying a brand new ticket it seems that money is not a high consideration for you; you are effectively buying a walk-up fare.
If your flight lands at 7, allow an hour for late and two more for clearing Border Control and retrieving luggage. So it is 10:00 before you are ready to begin your transfer. You need to check in 90-120 before a domestic flight such as Bordeaux, remembering that the UK now controls passports again on departure so don't be late. So a 6 pm flight needs you at the gate by 4:00 to 4:15.
So you are trying to avoid a 6 hour wait, right?
If the transfer involves rubber tyres on the M25 - Gatwick to Heathrow will certainly, as will the bus to Stansted - add fudge time to the expected driving time because of the proclivity of the M25 to turn to treacle.
Since you have money to burn, a taxi on the M25 can be more nimble than a bus, and can go when you are ready, as soon as you clear Customs and walk out the frosted glass door.
At Heathrow you might be OK with a flight around 2:00 or so. Stansted is at least an hour further away, so maybe 3:00 or so.
What times are the flights at Heathrow and Stansted? (Nothing at Luton, the easiest airport to reach from Gatwick, a straight shot on Thameslink trains?)
