Liverpool Street to Southend Airport is a direct if slow and tedious journey on fairly old trains, 8 stops and about 53 minutes.
A slower, more expensive, but perhaps slightly more comfortable journey is on C2C trains from Fenchurch Street station in London, near the Tower of London but involves taking the C2C to their station near to the shore in the town of Southend and then a fair walk up the hill to the other Southend station and then back 2 stops towards London to the airport station.
Having gone both ways I'd take the direct route and put up with the trains for an hour.
The Southend Airport station is very small to match the extremely small airport it serves. Hours pass there with nothing happening - there are only a handful of Easyjet flights and even fewer of anybody else.
Having used that option once I don't think I would do it again.
