Going to London in 2 weeks. Arriving at Heathrow and taking train to Paddington but what is the best way to go train or cab/ Uber?
Next part of trip is to York and wondering what train to take and how long to plan?

I’m guessing since you are asking you haven’t pre booked the Heathrow Express. It’s costly and farther out you book a ticket the better the savings. The Express is clean and fast; 15 minute ride to Paddington. Signage at Heathrow is good on how to get to it but its not a short jaunt. There are people movers. Simply remember if standing on the people mover to stand on the LEFT.
Uber has recently been allowed to operate in London BUT if want to experience the traditional Black Cab ride ( with a driver who had to take the Knowledge test for their license) then consider them. Not cheap but guarantee the driver will get you to your destination in a professional manner.
You can take the new Elizabeth line from Heathrow to paddington. Far cheaper than the heathrow express and should take about 35 minutes to get to Paddington. If you have a contactless payment method (tap card, applePay, googlepay, etc) you can just tap in and out of the train. No need to buy a ticket and you will be charged the same as if you had an Oyster card. Otherwise, you should be able to buy an Oyster card or tickets at the heathrow station.
The earlier you buy your tickets to York, the cheaper they will be. The train will be leaving from Kings Cross and the link above will take you to the site to buy tickets.
Where is your hotel?
The method of transportation you choose could put you right at the doorstep of your hotel.
And that's including tube and coach (bus) as a means of transportation.
My preferred way to get into London is taking the Piccadilly tube line in. This line goes from Heathrow into London, passing through several tube stations, to Kings Cross/St. Pancras stations area.
You will be leaving to go to York from this area, so if you don't have a hotel already, I would suggest one of the Premier Inns near these stations.
This is also the way to go if you are not staying in London, but wanting to go directly from Heathrow to Kings Cross station and then boarding the train to York.
Cab or Uber would never be my preferred way to go in.
Another of my preferred ways to get into London: I have also gone from Heathrow into London by coach. The coach (bus) station at Heathrow is well-marked; signs lead the way to it. There is a station at T5 and another serving T3 and T4. This coach arrives into London at Victoria Coach Station, which is right across the street from Victoria Train Station. This area is a couple of blocks from Buckingham Palace, and is another good area to choose if you've not already booked a hotel.

Are you staying in London? If so, which hotel? Depending on where your hotel is located it may be better to take the Piccadilly line into London rather than the Heathrow Express.
The trains to York leave from Kings Cross. It takes between two hours and 15 minutes and two and a half hours to get there. (I took this route on Tuesday.)

It depends on where you are going in London. It's a big city.
I was confusing in my question!! We are staying in London at the Blackbird Hotelfor a few days the going on to York for another few days.

The UK National Rail site: nationalrail is very easy to use to show all the train options to York for you and the fares.
If you mean The Blackbird Hotel in Earls Court...DO NOT TAKE THE HEATHROW EXPRESS. It will be a waste of a lot of money.
This hotel is literally one block from the Earls Court tube station. The Piccadilly Line stops at this station. Direct from Heathrow, no changes, 45 minutes.
I stay literally around the corner and know this neighborhood like the back of my hand. I was there a few days ago.
