You can easily access Windsor Castle on your own as well. It is just a matter of taking a train.

The Windsor Castle website indicates the train stations serving the castle. Enter either in the Transport for London website plus your hotel address to see the route and times.

Again not countryside, it has been swallowed up as a suburb of London. It does have extensive grounds. Easy run with a commuter train from Waterloo to Hampton Court station.
The problem with your desire for countryside, is that trains all go to towns. The stations are all in the middle of towns, the trains don't stop in the countryside between towns (too few customers).
Other suggestions: Canterbury, Lewes (lovely small town), Oxford, Cambridge, St Albans.
Leeds castle - a long way from a station, many companies do bus trips there from London.
