Time to make a connection at Heathrow

We arrive at Terminal 5 at 1010 in early June. I want to book a flight to Manchester that
departs at 1210. Since I am assuming our inbound will be on time as west to east has a
tailwind 99% of the time am I being irrationally optimistic to expect that we could make
that 1210 flight?

If it's a connection at the same terminal on the same booking then I think so. If it's a connection involving changing terminal or collecting and rechecking your bags, I doubt it.

We're arriving from US so we'll have to collect our bags and go through customs.
I assume the flight to Manchester leaves from a different terminal.
I hate to be prudent but taking a later flight might be a wise decision. :-(

It's not just the tailwind. What if your aircraft is delayed in getting to your departure airport? Weather, mechanical issues, ATC issues at either end, UK border control taking longer than usual. There are many reasons why you may miss your flight with a short 2 hour window.

At least you don't have to change terminals. This is about the only thing in your favour.

You would have to present yourself for conformance 35 minutes at security before your flight. So you have rather less time than you might think.

Your boarding pass is scanned at the entrance to security. If it's less than 35 minutes to scheduled flight departure, you aren't allowed through.

I booked the 1405 flight to MAN but now I've the problem of getting to Chester in time
to pick up our hire car. The flight arrives in MAN at 1510, hopefully, and there is a
1611 train from the airport to Chester*. I assume an hour will suffice to pick up our
checked bags and make it to the train? Nowhere on the MAN airport website does it
show where the trains are but it isn't that big of a place so it can't be too bad, can it? :-)

*We're headed to Caernarvon for the night.
