We'll be in London for three days in May. Staying at the Hilton Waldorf near the theatre district. I'm interested in local pubs and restaurants. Moderately priced restaurants where the focus isn't red meats.

There are a lot of upscale restaurants in that area, but also some moderately-priced ones as well. The only one I've eaten at is Pasta Brown's, which I enjoyed. That's a little under a 10 minute walk from your hotel.
But you can also find other places like Curry House CoCo Ichibanya, Dishoom Covent Garden, which is incredible Indian food (I've eaten at other locations and love it), Lao Cafe (Thai food), and Hoa Sen Vietnamese Street Food Restaurant.
If you're not into ethnic food, there are plenty of Italian places nearby, and plenty of pubs. Pubs, of course, will have a lot of red meat items, but you should be able to find other options as well.
You can also ask the concierge at the Waldorf Hilton for some suggestions.
Some good suggestions from Mardee, tho a small correction which is that Lao Cafe is actually Laotian food (and one of only two Laotian restaurants I know of in London) which is a bit different to Thai and has some very unique and delicious flavour profiles. You're also relatively close to Chinatown, where you'll definitely find a lot of very good moderately priced restaurants. A classic for pre theatre nearby is J Sheekey, which is more focussed on fish. One of my very favourites in that area is Eat Tokyo, which has a gigantic Japanese menu. I've been many times and everything is amazing.
For pub food, I always recommend any Fuller's pub as there food is always very reliable and they have great beers as well.

No problem! Fuller's is a chain of pubs, and you can see their locations on the link I shared. The ones in very touristy areas do get very busy/full of tourists (like the Admiralty in Trafalgar Square, which is a great pub but does get very busy), but ones that are in slightly less touristy areas are quieter. Locals definitely frequent these pubs, which are owned by a brewery based in west London (which you can also visit).
London Pride
You will be walking distance to Covent Garden where you will find a variety of restaurants. You could just walk and browse; many restaurants have the menu posted by the front door.
A walk around Covent Garden is a fun thing to do anyway.

It's just north of Trafalgar Square and St Martin-In-The-Fields church a couple of blocks.
Good wrap sandwiches (chicken or falafel), vegetable bowls, side salads; mostly vegan but some meat options are available.
Their other location is City of London/60b Cannon Street.
Speaking of St. Martin's, I forgot to mention the Cafe in the Crypt. I love eating there, as you get to take a lift underneath St. Martins into the crypt where you can eat amongst the tombstones. :-) The entrance to the lift sits in a small courtyard right outside St. Martins-in-the-Field, which is right off Trafalgar Square and about a 10 minute walk from your hotel.
The food is excellent (served cafeteria style) with a variety of food options, and very reasonably priced. It's been there forever; I first went there back in the mid-90's and enjoyed it so much, I went back several times. I ate there more recently last year when I was in London and it's still just as good. Sadly, they did not have rice pudding like they used to, but I did get a chicken and leek pie that was really tasty!
