Have you considered Indian cuisine? It is likely to be veg friendly. In Belgravia is Michelin starred Amaya Grill but nearby there are other sophisticated choices too.

My favourite special occassion restraurant in Belgravia is Boisdale's: https://www.boisdale.co.uk/restaurant/belgravia
It's Scottish food (including game, smoked salmon, lots of nice whiskies...). However, I don't know what it has for vegans.
Regarding Zedel's, just be aware that it's completely underground. I ate there once and spent the entire time feeling very claustrophobic so would never go back. That's me personally- but just a warning in case anyone in your group may feel similarly.

Perhaps you would enjoy Nopi (one of the Ottolenghi restaurants). They always have interesting vegetarian selections in addition to meat and fish options.
I don’t consider Brasserie Zedel to be a special occasion place if that is what you mean by “Zeidel”. I went once and it was a big cavernous place and I thought the service was really poor. It was just after the pandemic so hopefully their service has improved.

Ottolenghi is great for vegetarians. I’m not sure about vegan. Vegan is tricky and some higher end places just don’t cater for it but you can always contact them in advance to ask if they can provide something. Indian is a good idea as veggie options are always excellent. There are several high end Indian restaurants in London. Again, vegan could be problematic if they use ghee but it’s worth asking about this.
What kind of budget per head? Top end restaurants will probably do a vegan tasting menu.

Not sure how fancy you want to get, but Dishoom is lovely, the food is outstanding, and they have options for everyone, including your vegans!
Comptoir Libanais also has lots of options for vegetarian and vegan diners, but again, not sure if it is special enough.
We adore Hawksmoor for nicer occasions - we go to the Knightsbridge location - and I know they have vegetarian options. Not sure about vegan 🤔 but you could certainly call ahead. The staff is amazing. It is primarily a steakhouse, though. :-(
