From south to north I always lookout for these:
Arsenal’s Emirates Stadium
Peterborough Mosque
Durham Cathedral
The Tyne Bridges
Alnmouth
Holy Island & Bamburgh Castle
River Tweed
The England/Scotland border sign
Torness Nuclear Power station
Bass Rock
and keep your eyes peeled for deer in the fields
Eyes peeled at Durham & Newcastle stations, looking to the right of the train as it heads north. I never tire of seeing the bridges over the Tyne at Newcastle.

Also look for the Angel of the North statue as you head towards Newcastle.
The Tyne bridges are what I specifically remember as well.
Thanks for the tips! The video gives a good feel of the landscapes and started us into spending much more time on Youtube features about Edinburgh.
