I’m thinking of buying a piece of luggage that’s 31.3x19.3x11.2 and is very lightweight. I’m traveling on Ryanair and Easy Jet. Will this size bag be accepted as long as I don’t go over 20kg. That’s 50lbs, correct?

That is an absolutely huge bag. Are you sure you need that much capacity? I think you might be ok as checked luggage with easyJet but questionable with Ryan. A quick peak at Ryan air only shows checked luggage of 10kg (22lbs) and 22x8x16 size bag. About half your suggested size. easyJet will accept (for a fee) up to 23kg (50lbs) or more if you pay more. Didn't mention total size. Maybe you should leave the hair dryer and flat iron home.
