I’m going to London over the summer and want to take a train to Rochester and from Rochester a taxi to Bodiam Castle, returning to Rochester by taxi to take the train to London in the evening. Is it difficult to get taxis in Rochester and Bodiam? Does it matter if I go on a Sunday or a Monday?

There appears to be a taxi rank at Rochester rail station, looking at Google Maps.
I know Bodiam and there certainly isn’t a taxi rank there, as it’s in the middle of nowhere from a public transport perspective. The nearest rail station is Robertsbridge and there aren’t any taxis there.
Why return to Rochester to then head to London? Pre book a taxi to Robertsbridge and take the train to London from there.
Bodiam is open the same hours Sunday or Monday. There maybe rail engineering work at the weekend disrupting rail services.
How do I book a taxi ahead of time? Is there a website for a particular taxi company?
