My family is planning a trip in May to include the UK and Ireland. Arriving in London then driving north to Scotland, then taking ferry to Belfast and finally ending up in Dublin to return back to the US. Is it feasible to rent a car in London then drop off in Dublin? Any recommendations on rental car companies?

You would be better off dropping the car in Scotland and picking up a new rental in Ireland.
Edit: I just tried a search on AutoEurope and it said “one-way rentals are not permitted between the United Kingdom and Ireland”.

Most car hire companies prohibit taking their vehicles on the ferry to Ireland. You would pay a fortune in a one way drop fee if anyone did permit this, so look at separate rentals for each country.
Unless you have lots of time, I would consider taking the train from London to Scotland as the drive is long and tedious.
