Public Transportation in London

I'm traveling from Stansted airport to the Lambeth North underground station late at night. (I'm a woman traveling with my two girls, 16 & 12.) What is the quickest, safest, least expensive option for doing this?

I'm also trying to figure out what kind of pass (Oyster, travelcard, London Pass) I should get. Following is what I know about my itinerary.
Arrive on a Friday night @ 22:55 and travel to a flat on Lambeth Road Astbury House, London, se11 6lz.
Leave early Saturday morning to go to Harry Potter Land. Spend the day there then return to London to see sights. Sunday & Monday - see sights. Wednesday get to Stansted airport to catch at 7:30am flight.

Any help on what pass to buy, what routes to take, things we should do during our sightseeing times would be much appreciated!! (The things I've thought of to do so far are: London Eye, tower/bridge, Buckingham palace - I think we can walk to all these places from where we are staying.)

A pre-booked minicab from Stanstead to Lambeth North would be approx. £70.

In my experience of taxi collections from airports, this often goes up due to waiting time. Drop offs are easier.

Lambeth isn't a place to be walking round in the early hours.
