We will be in London on September 10 and would like to see a soccer match, preferably Arsenal. I know tickets are unavailable until July 25 and buying from team website is preferable. I read the list of "sketchy" websites and know not to purchase from Touts. That said, is it even a possibility of buying tickets or do all matches sell out for all home teams?

Getting Premiership tickets is difficult unless you are a season ticket holder. You must ONLY buy direct from the club. Priority is given to club members. All seats will sell out.
Matches are subject to change to fit in with the tv schedules, so the match could be Friday night, Saturday afternoon or evening or Monday evening. Dates will be confirmed 3 weeks out.
You would be better watching a Championship match, as tickets are much easier to come by and will not change for the tv schedules. Try Fulham or QPR.
Another option which doesn't require membership with the club is Thomas Cook. They provide match ticket and hotel packages for some of the top clubs:
