We ended up having to get an oyster card last minute today, so I haven't researched it properly.
Does it only charge per trip instead of taking advantage of the daily cap for undergroud travel? Like waiting till the end of the day to tally trips.

Not it caps daily and on a Monday-Sunday basis, the amounts dependent on time of travel, number of zones, and mode of travel.
As you get near the daily limit, you’ll be charged less for your last trip than you were getting charged for your earlier trips. The computer keeps amazing track of where you rode on your Oyster card (or credit card, if you use one), and how much it cost.
The TFL app is a great resource for figuring out how to get around by public transport, and on the last three London visits, we’ve used buses a lot. We used to use the Tube exclusively, but the cheaper buses really are useful, too, and the app lets you know h out w long it’ll take, and what bus stop number (or letter) you need for what number bus.
I believe it is deducted some time around 4am the day after travel. Was there a reason for buying an Oyster card. Most just tap in and out using credit or debit cards.
