North Devon and Cornwall itinerary

We will be spending 8 days in southwest England next June flying in and out of Bristol. We need some advice about the Cornwall part of our travels. We will drive from Bristol to Lynton/Lynmouth to spend two days/three nights exploring the north Devon coast and Exmoor. We will then head down the coast to the Penrith Peninsula with stops at Tintagel and possibly Port Isaac. We are hoping to attend a performance at the Minack Theater, visit the Telegraph Museum, Cape Cornwall, Mousehole, and St. Michael's Mount over the two full days we will be based in the area. We're looking into staying at Gurnard's Head Inn near St. Ives for three nights.

So, first questions - do these destinations seem possible in that time frame? Any tips on places in the area for boat trips?
The big question, however, is how to use the final two and a half days (we have a late afternoon flight from Bristol)? Here are 3 options we're contemplating:
- move east in Cornwall to the area around Fowey to experience the eastern attractions, i.e. the Lost Gardens..., the Roseland Peninsula, Falmouth
- Dartmoor
- go all the way to Lyme Regis and the Jurassic Coast

Any advice on itinerary as well as accommodations would be appreciated.

For the amount of time you have, this looks like a very full itinerary. As others have commented, getting around Cornwall is slow, even without summertime traffic. You may need to map out your destinations with some designated "optional (if we have time)" so you won't go crazy trying to cram them all in.

For your final two and a half days, I think your first alternative is best, but others who've been there more recently may have different advice. Do allow plenty of time to drop off your rental car and go through airport security. This can take longer than you expect if there are many other travelers in the queue ahead of you.

Two summers ago (mid June) I spent 3 nights just outside Mevagissey (Portmellon Cove) and 3 in Fowey. While Fowey was nice, the Mevagissey area and where I stayed at the Portmellon Cove Guesthouse was frigging beautiful. I walked to the Lost Gardens of Heligan from Portmellon Cove >> a beautiful walk, I think about 4-5 miles one way. You can always taxi back if you don't want to walk back.
